Chicken recipe ( Mombasa, Dar, Indian touch) Yummy!!
A recipe for lovers flowing with a passion to love more and
more, lovers of people, lovers of food, lovers of the kitchen and lovers of
art.
I went to Dar Es Salaam to visit a few friends. So I chose
to cook for them, one comes from Mombasa and the other one comes from Dar. It
got me wondering what kind of food would suit their taste. The one from Mombasa
loves coastal Mombasa food and the one from Dar loves Indian food. I personally
love Indian food so I had to come up with a recipe that would make us all happy
and satisfied. After all we cook for people to eat and enjoy, the joy of a cook
is when the meal is enjoyed.
It didn’t take long before something came up, and this is
what I came up with. Chicken recipe!!! This is no ordinary chicken; it’s got Mombasa,
Dar and Indian taste.
So here we go…
Ingredients
1 kg chicken
1 tablespoon cooking oil
Lemon juice from 1 big lemon
1 chopped big onion
1 teaspoon crushed garlic
1 teaspoon crushed ginger
4 chopped big tomatoes
1 teaspoon tomato paste
1 tablespoon mixed spices (it
would also go well with ½ teaspoon cumin and ½ teaspoon turmeric instead of the
mixed spices I bet)
1 teaspoon salt
½ teaspoon red chilies powder
½ cup water
1 cup coconut milk
Procedure
Skin the chicken for those who
don’t like it.
Marinate the chicken with salt, lemon
juice, mixed spices and the red chilies powder and let it marinate for 30
minutes or more.
Heat the oil and fry the onions
till translucent
Add the garlic and ginger and
stir for a minute before adding the tomatoes. Let it simmer for 7 minutes or
until they are well cooked.
Add in the chicken and let it
simmer for 10 minutes before adding water to boil for more 10 minutes or until
cooked to your preference. Stir and turn every once in a while to make sure the
spices are evenly spread and well dissolved in/on the chicken.
Now add the coconut milk while
stirring and let it simmer for 7minutes.
Voila! Your chicken is ready,
smells and tastes delicious.
Sever over vegetable rice or chapatti
Tip: Boil your rice with barks of
cinnamon (5 for half a kilo) and you won’t believe the taste and the aroma that
comes along with it.
Well, my friends enjoyed the meal
and you don’t wanna know how long that food lasted!
